Five years ago this May, Chop It Salad Co. opened its first location. Our goal was simple: to make the world a better, happier, healthier place, starting with our hometown, Cleveland.
Unfortunately, Chop It will be closing Friday, May 1st. I could go into all the reasons why we're going out of business, but the bottom line is that we didn't make it.
To all of our guests who have supported us over the years, we truly cannot thank you enough. You helped make our dream a reality, and it really has been a privilege to serve you. To all of our vendors, landlords, and other business partners, thank you for taking a chance on a small, local, start-up. Without you giving us the opportunities to succeed, we would have not been able to get Chop It off the ground in the first place.
To our family and friends who have loved, supported, and sacrificed, a million "thank yous" and "I'm sorrys" wouldn't be enough. I know personally that many of my relationships suffered over the last five years, and I look forward to using my newfound free time to rebuilding those.
And lastly, and perhaps most importantly, to the Chop It team, both past and present: I know this path wasn't always easy. I know this journey was filled with detours and potholes and obstacles. And I know at times it was frustrating and didn't always seem worth it. But from the bottom of my heart, I'm so grateful for your time, energy, effort, enthusiasm, and belief. We had some great times. We were part of something special. You helped build something that few people ever get to experience. Together, we wrote and rewrote and rerewrote the rules, we put in long hours, we worked hard, we learned, we grew, but above all, we loved. We didn't work at Chop It because it was just a paycheck, we worked at Chop It because we loved it and saw it to be more than what it was. It was an honor to work with each and every one of you.
So with that, we'll prepare for our final bow. It's a magical world....let's go exploring!
